Mediterranean Fruit Parfait

Ingredients:

3/4c 1% milk
1/3c Couscous
1/2c Plain or lemon lowfat yogurt
1/2c Nonfat sour cream
1tbsp Honey
1tsp Lemon zest
1/2c Strawberries, sliced
1/2c Fresh blueberries
1/2c Nectarines, sliced
1/2c Fresh raspberries
1/4c Dates, chopped

Procedure:

In a medium saucepan, bring milk to a boiling then stir in couscous. Simmer, covered for 1 minute then remove from heat and let stand for 5 minutes. Fluff with a fork and let stand 1 minute.

In a small bowl, combine yogurt, sour cream, honey and lemon zest. Add couscous and mix well.

WIn a separate bowl, combine fruit.

Using 6 clear glasses, layer the bottom of each with fruit followed by a layer of the couscous mixture then another layer of fruit.
